Eggplant parmesian

Peeled eggplant sliced
On a towel sliced thin 1/4 inch
Egg mixed with 1/4 c milk wash salt n peppar
Almond flour a cup 1 c parmesan cheese
2 tbl cornstarch
1/2 tsp salt
1 tsp Italian seasoning
Sprinkle Cayenne
Johnnys seasoning at end
Olive oil drizzled on pan and over top
Soak each slice in egg wash then dredge in almond flour seasoning mixture to coat lay on roasting pan drizzled in olive oil
Roast at 400 for 20 min then flip over oil again if necessary
End with cayenne and johnnys pour red sauce over with serving
