Strawberry jam

Picked at.boxx berry farms today
I followed the recipe on the Cerro package says to add 6 pints or 12 cups of berries stems removed and mashed
3 c prepared juice I used welches grape
7 c of sugar(wow!)
2 pkg of Cerro 1/4 c of lemon juice
Bring to a rolling boil then let set overnight24 hours
Hope it sets
It didnt say how long to boil

English Muffins

English muffins are made from  dough not a batter and they are baked right on top of the stove in a skillet. This recipe calls for the dough to rise just once 35 to 40 min makeing the muffins more pratical
Family fun recipe
1 c milk
3 tbl butter cut into peices
2 tbl honey
1 c warm water (110 F/45 C)
1 pkg yeast
cornmeal
5 1/2 to 6 c flour
1 tsp salt
Combine milk butter and honey in a saucepan. Warm mixture over medlow heat until butter starts to melt, then whisk it briefly. Remove the pan from heat and allow the liquid to cool until lukewarm
While the milk cools pour the water into a med bowl and sprinkle the yeast over it. Stir the liquid gently with a fork. Then set the bowl aside for 5 to 10 min until yeast is dissolved. Line 2 baking sheets with waxed paper and sprinkle on a cornmeal ( this is where they will rise)
 Pour the cooled milk into the dissolved yeast and gently stir the mixture until well blended. Add 3 c flour and salt to liquid. beat the mixture vigorously with a spoon until smooth 100 strokes. Beat in enough of the remaining flour 1/3 c at a time so that the dough is firm enough to knead and no longer sticky
Scrap the dough from the bowl onto a floured surface. dust the top of the dough with flour. Flour your hands and knead the dough for 3 to 4 min. Let the dough rest  5 min.
( I put on dough setting in the bread machine)
roll out the dough with a rolling pin, starting in the middle and pushing the pin from the center out, until the dough is a half inch thick
Cut the dough into circles 3 1/2 inch biscuit cutter i used a canning jar ring
Gather  and reroll the scraps cut more circles into a heart use a knife or scissors to cut a third of the way into the circle round tops. pull to point on the opposite side for the tip of the heart.


  1. Transfer the muffins to the prepared baking sheets, spacing them well apart. Sprinkle cornmeal on the tops. Cover the muffins with a dry, lightweight towel and let them rise until they are almost doubled in height--about 35 to 45 minutes.
  2. English Muffin Hearts - Step 9 When the muffins have risen, heat a large, heavy, ungreased skillet over medium heat. (If you have two skillets, you may want to prepare both so you can cook more muffins at once.) Or you can use an electric griddle heated to 300ยบ. Carefully lift the muffins from the waxed paper and place them in the heated pan or griddle, spacing them an inch or so apart. You should be able to fit 4 or 5 muffins in each pan.
  3. English Muffin Hearts - Step 10 Cook the muffins for about 10 minutes on each side, using a spatula to flip them. You may have to adjust the heat if the muffins are browning too quickly or slowly. Transfer each batch of cooked muffins to a wire rack to cool before splitting and toasting them. Makes 1 1/2 dozen.

Mini Eclairs

pastry
1 c water
1 stick butter
1 c sifted flour
4 eggs

filling
3 c milk
3/4 c sugar
1/2 tsp salt
6 tbl flour
3 eggs
2 tsp vanilla

icing:
2 (1 ounce) squares chocolate
2 c sugar
1 c whippig cream
preheat the oven to 400 degrees
Heat water and butter to boiling point. Add flour and stir constantly until mixture is smooth and forms a ball when tested in cold water. Remove from hear and let cool. Beat in 4 eggs, one at a time. Drop dough from tsp to form filling by combining milk, sugar, salt and flour, cook slowly until thickens. Add 3 beaten eggs and continue to cook until mixture is even thicker. Remove from the heat, cool and add vanilla.
With a serrated knife, slice pastry puffs lengwise, but not all the way through, Pipe custar mixture into the center, Melt chocolate for icing, add sugar and cream. Cook over medium heat until soft ball stage. let cool and beat until smooth. Ice tops of the eclairs

Shilo's Bran muffins

This muffins turn out great for me everytime  I make them. Soft chewy and the kids love them.

Tony Serrano still mentions when I made these on the fourth of July at his BBque stand he liked the blueberry ones, they sold out quick.
Bran muffins:
I blend 1 1/2 cups of oatmeal in my blender to chop it fine
then soak it in 1 cup of buttermilk ( I used milk and a tsp of vinegar)
Mix together 1/3  c canola oil
2/3 c brown sugar
1 tsp vanilla
one egg
add in separate bowl
1 c flour ( whole wheat)
1/2 tsp salt
1 tsp baking soda
1 tsp baking powder
mix together then add bran mixture that was soaking. Add any friut blueberry or a mashed babnna is good.
bake 350 for 15 min.

Leannes Gramas Lefse Norwegian

This is a recipe from my nieghbor Leanne. Her grama used to make this as a breakfast treat for her as a child. She shared it with me I want to share it.
5 cups potatoes
1 stick melted butter
3 tblsp powdered sugar
2 cups flour
1/2 tsp salt
cook potatoes skinned and cool to room temp. add butter sugar and salt. Knead flour into potatoes to make a dough. in small amounts until you can made a ball. Shpe into a roll 2 inches i diameter an cover with saran wrap
Heat griddle to high 500 roll out balls of ough egg sized flour so it doesnt stick roll flat 8 to 10 inches have very large oversized spatula or lefse stick Place lefse into pan an cook until one side is bubblig and brown flip and repeat. place on towel to cool ad cover with towel to keep moist Place cooled into plastic bag. butter and shake cianamon and sugar over.

1 cube butter soft
2 tap xanthan gum
1 tsp cornstartch
1 tbl b powder
2/3 rice flour
1/3 tapioca
1/4. C sugar
I egg beaten
1 c evap milk
Bake 400 in cast iron greased pan 25 min

1cup sugar
2eggs
2/3 oil
2tsp soda
2 tsp b powder
2c flour
2c buttermilk I use milk and tsp vinegar
2/3 corn meal (soak meal in milk)
Cook at
400 degrees in oven for 25 min

French bread


Ingredients:
1 1/2 cup  water
2 tsp butter softened
4 cups flour
4 tsp sugar
1 1/2 tsp salt
1 3/4 tsp yeast



Directions  Place all ingredients in bread pan of bread machine
Select french on mine its 2
press start bread took 2 hours to kneed rise and bake. I sometimes remove dough before baking and make into two large french bread loaves brushing tops with whipped egg. Ice cubes tossed in bottom of the oven for crusty crust. I heard using a spritz of water helps too
D
