Angel food cake for mom

My mom is diabetic I should be usig a sugar substitute
I have a great Angel food cake I like to make her.once a year.
Today is her birthday.
A bunt pan works best as well as room temp eggs.
Sift two cups flour( it calls for cake flour so I add three tsp of baking powder)

four times with a
half cup of sugar set aside
Whip
Ten to twelve egg white with
One and half tsp of cream of tarter
3/4 tsp of kosher salt
about two min on high until stiff peaks form
Preheat oven to 350
Sprinkle one and a half cups of powdered sugar over egg whites asks for superfine
Beat on high few min
Beat on high until thick and shiny
Add vanilla and whisk ontology very thick one more min

Fold in one fourth of the flour mix at a time with a spatula
Bake in greased Bundy pan for 35 to 40 min
Until springs back to the touch
Run thin flexable knife around pan to remove place on drying rack

To cool
For a chocolate glaze
Place 1/2 pound chocolate chips in
3/4 cup and one tblspoon heavy cream in heat prof bowl over a pan of boiling water
Stir until
Chocolate melts
Pour over cooled  cake
