Carrot cake
Easter cake !!
Mary my wonderful neighbor and I occasionally get to bake together.
We tried a new carrot cake recipe and hope to share it with you.
My buddies Emma and Loreli were helping in the kitchen Loreli grated 10 carrotw ( with help)
Emma sifted flour with three tsp of baking powder and 3 tsp of cinamon! until light and fluffy ( I think this really helped it turn out nice and fluffy. Sometimes cake and be so heavy from scratch.
I omitted the baking soda in this recipe . And doubled the recipe we bake two lovely cakes to share with our families!
I whipped 8 eggs with
2 and 1/2 c canola oil
3 tsp of vanilla
until combined.
After Emma sifted the dry ingredients.
Four cups of flour
six tsp of baking powder
one tsp salt
three tsp of cinamon
(Shilo suggested cloves mm !)
nutmeg would go well too!
We added it to the wet and blended in the mixer.
we folded in the 10 grated peeled carrots.
we baked in my oven for 50 min at 350. filling cake pans half full. We refrigerated the remaining batter and made the second cake. Let the cake cool on wire rack in pan for 20 min. then carefully remove to cool until not warm to the touch.
we cut off the top for a level top.
Mary and I made a fluffly white frosting
Whip two cubes of softened butter unitl nice and fluffy
turn off mixer add three cups of powdered sugar
3 tbl spoons of whole milk and one tsp of vanilla
whip until light and fluffy add more powdered sugar or a firmer piping frosting. cover when not using to prevent drying out.Of course cream cheese is best with carrot cake and added an 8oz package of cream cheese instead of two cubes of butter, would have made our frosting even better for this cake
Mary brought walnuts over. we blended in the ninja to make some good chunks. and used in a filling for the cake along with blender chopped dark chocolate pieces from the chocolate factory. Thanks Janelle!
I worked on making flowers and leaves with Mary. I sculpted a bunny pushing a piece of a skewer.
Janelle and Mary finished piping decorations and used gumpaste glue to attach flowers.
