Pink Raspberry Jello Cupcakes
YourCupOf Cake has a great recipe for pink cupcakes with jello mix in the frosting.
I found littledelightscakes has a good frosting recipe with jello. I thought I should make some fun pink cupcakes to celebrate Audrey's cast coming off today! the sun is out and its early release the six kids running around would eat them up!
The cup cakes had to have a filling, and since I had yolks left from using egg whites in the recipe , I decided to cook a custard filling. the kitchen has good recipes for custard.
Cupcakes:
I whipped
one cube room temp unsalted butter with
1 1/2 cup sugar
until creamy
I added 4 egg whites one at a time (room temp is best)
I put the yolks aside for custard filling
2/3 cup 2% milk with 1 tsp of vinegar (substituting buttermilk)
1/4 c nonfat yogurt (substituting sour cream)
whip together until well blended
2 tsp vanilla
atlas findings has a great substitute for cake flour
I used
3 cups of flour with 2 tablespoons of cornstarch
1 tbl baking soda
1/2 tsp salt
sifted is better but I just poured in while mixing, stopping to scrape down the sides
mix until blended
stirring in 2 tbl raspberry jello mix
bake 350 degrees in oven 15 -20 min. depending on how big the cupcakes are. check to see if done by poking the center to see if comes out clean. let cool removing from the oven.
Filling:
on low heat cream together 1 1/2 c milk
1 cup of sugar with
4 yolks
I whisked until simmering
stirring in 1 tbl cornstarch to thicken
adding 2 tsp vanilla removing from heat
I stirred in 1 Tbl dry raspberry jello mix
let cool in the fridge
Buttercream:
cream 1 cup crisco
until shiny and fluffy (you can use half butter half crisco)
turn off mixer and pour in 2 pound bag powdere sugar
add 6-8 tbl milk or cream blend low to combine add 1 tsp vanilla
( you can add 2tbl merigue powder if you like )
I added 2 tbl raspberry jello mix
Once cupcakes are cool cut out circular center to pour pudding into each center placing cut out peice on top.
whip until pulls away from sides
medium consistency
fill a pastry bag to pipe onto cooled cupcakes. Pipe icing starting on the outside and swirling in overlapping . sprinkle with pink sugar or sprinkles top with a cherry if you want. Kids loved them.

Mustang car cake
O I tried a car this time the back was cracking I really need to carve the layer stacked from sheet pans layers it bakes well with the sponge recipe easy to pick up and not too crumbly.
